A pizza is carried flat, never any other way
This is the basic rule, and it is also the one most often ignored. A box that is tilted or stood on its side makes the toppings slide to one side: the cheese shifts, the ingredients pile up, and the pizza arrives unrecognisable.
Our drivers carry the boxes horizontally, wedged in to stop any movement during the trip. With a large size or an order of several pizzas, that is what makes the difference between a decent delivery and a disappointment.
The second problem is steam. A hot pizza shut in its box gives off moisture that softens the base from underneath. The pizzaiolo's vented box helps, but the length of the trip is still decisive: the shorter it is, the better the base on arrival.
